Originally from Glasgow, I grew up in a home where food brought people together — even if my mum couldn’t cook to save her life. Luckily, my gran could, and it was in her kitchen at the age of 16 that I discovered the joy of cooking. What started as a necessity quickly became a passion, and that passion carried me into the culinary world long before I truly understood where it would take me.
I worked my way up through kitchens across Scotland and England, eventually becoming one of the youngest head chefs in the south of England. My career pushed me to travel, learn, and evolve — from mastering molecular gastronomy and fine‑dining techniques to exploring global flavours and pairing ingredients in ways that surprise but always make sense. No matter how beautiful a dish looks, I’ve always believed that taste is what truly matters.
After years of moving for food, Madeira became the place that finally felt like home. The island’s ingredients, traditions, and landscapes influence my cooking every day. I love taking local dishes and giving them my own twist, but I’m equally inspired by flavours from around the world. Madeira gives me the freedom to create — and the space to do it well.
As a full‑time private chef, I’ve built my business here over several years, this isn’t a side job or a seasonal gig. It’s my craft, my livelihood, and passion.
